Mother's Day Kabobs


My favorite (and only) sister wanted Shrimp Kabobs for Mother's Day so I thought they would be great to grill and they were. I just got a new Kabob set for our anniversary and it worked great! Once I figured out how to spell kabobs, it was a lot easier to find a good recipe (I was spelling it kaboobs!).

So here is the recipe:
Spicy Pineapple Glazed Shrimp Kabobs from the Food Network

1 pound large shrimp, peeled and deveined (I got my from Hy-Vee)
1 1/2 cup pineapple chunks from a can
1 red onion, peeled and cut into chunks
1 green bell pepper, seeded and cut into little squares (a tip when cutting up a pepper is to cut off the ends)
2/3 cup pineapple juice (from the can it was the exact amount)
3 tablespoons lemon juice
3 tablespoons lime juice
1 tablespoon minced ginger (I couldn't believe we had that in our spice rack)
1 jalapeno, seeded and finely chopped
2 tablespoons soy sauce
3 tablespoons honey
3 tablespoons chopped cilantro (I love cilantro, I was so excited it was in the recipe)

Skewer the shrimp alternating with the pineapple, onion and green pepper. In a small saucepan, combine pineapple, lemon and lime juices with the ginger, jalapeno, soy sauce, honey and cilantro. Heat mixture over medium high heat and simmer until liquid is reduced by half. Brush (I just got a new brush too), the kabobs with the glaze. Grill for 3 minutes per side.

So it begins...

My schedule starts picking up again today as the class I teach at UNL (JGen 300) starts. I'm teaching on Tuesday's and Thursday's this semester from 9:30-10:45. I hope I have a great class like last semester. We will see. This will be my third semester teaching the class so I feel a lot more comfortable heading into it. I have all of the weeks figured out and the days will be much busier because I'm trying to pack the three days into two. Maybe one of the students will bring me an apple!
